The Adventure...weeks 13 and 14

Spring is slowly coming to the Fingerlakes region of NY. I enjoyed going outdoors this afternoon in the cool but springy air to rake abit in my lawn. I also saw the first green sprout in my hotbed! Yay! Looking forward to putting some kale out in my garden later on this week, Lord willing.

My foods have been varied and enjoyable. I'm blessed to feel well enough to try new recipes and to just be up and about. Here's what I've been eating, but by far not all of it because I forget to take pictures. Yes, I eat cookies at times. Yes, I eat popcorn. I forget to take pictures of that stuff. I promise I'm keeping it low :) and trying my best to eat mostly cell-nourishing foods, altho my flesh gravitates towards eating the 'junk'.

I took this food to our potluck lunch at church on Sunday:
garden salad, 'cheesy' potatoes, and chickpea loaf. The potatoes
got rave reviews from my husband, children and friends who
have Mennonite tastebuds. I'd say that was an accomplishment,
considering this dish is completely vegan, and very creamy
without the use of non dairy cheeses, oil or anything unhealthy.

I'm having a mental block on what this is. Looks like some

I truly believe that we owe it to the Creator of life to 
treat our bodies as His temple and to say 
"thank you" every day to Him by eating 
foods that He created to sustain our lives.

The Adventure...weeks 9-12

I'm a little behind in keeping up with my 'once a week' goal to post here but we've been hosting company, I've still been recuperating from my illness and well, I'll just put a few weeks together here. The adventure is going well. I did have a little bit of meat mixed in with the food I served my guests altho I tried my best to keep it out. And once I had a few breadsticks with some cheese on top, quite forgetting that I am not doing dairy (?? what I must say is that it's because I had guests here and I was enjoying their company so much that I forgot! :)

So here's a sampling of what I've been eating. I am eating quite a bit of raw foods these days to try to detox from the antibiotics I was on and it's helping with the exhaustion I was feeling. I'm so glad to be on the mend and getting adventurous with my food. I have pinned quite a few ideas in pinterest and I had some fun trying out some new things the past few weeks.

My husband, who has high blood pressure that hasn't been coming down very easily with a 90% plant-based diet has agreed to join me on my adventure of being vegan for the year. Yay!

fruit-juice sweetened red raspberry jam

with a Garden salad

a wonderful Greek style pasta I made for us and our guests.
It included artichokes, white beans, and spinach

baked egg rolls and very lightly fried rice
with sesame garlic sauce

oranges and kiwi are so delicious!


a vegan 'filet-o-fish'. I'm telling you, this was a huge hit.
My pickiest eater told me I 'hit the nail on the head with this one'.

BBQ chickpea gyros. These were excellent and shall be repeated

leftover bbq chickpeas and the sauce from the gyros over
grits with a side of green beans

crushed kale chips and vegan feta. Very good!

I've been diving into the nutrition info that I have on my
bookshelves this week, and wow, I've really been enjoying
renewing my understanding of how whole plant foods
feed my cells and create good health. I have worked my way
thru a few of these this week and highly recommend them. 




Education helps us to know how to change if change is needed
because if we don't change anything, we will get what we've
always gotten...and in America, the Standard American Diet
is creating disease, not health. I don't know about you,
but I would guess that you, like me, are not interested
in going the way of disease...
