The Adventure...weeks 18 and 19


I've been eating lots of nachos!

toasted "British" muffins with fruit-juice sweetened
raspberry jam are 'the bomb' mid morning these days

pasta salad with some pesto

my darling and I on a recent double date with friends.
I am losing inches and have lost and kept off 10 lb in 18 weeks.
That's saying alot for a woman who had a hard time losing weight
up until now!

The Farmer shared a strawberry/mango/pomegranate smoothie with me
one hot afternoon in between his field jobs

Taco salad hit the spot fair and square

i tried my hand at making overnite oats. I don't eat them but my Farmer
and some of his loyal subjects like them and it's a very handy breakfast
to have in the refrigerator for busy mornings.

My sweet Kristina made us veggie kabobs one night over a camp fire
in the back yard.


nachos. I can never have enough of these. Right now the
fireside guacamole from Costco is my favorite.

tofu based chocolate pudding with strawberries and shredded coconut

yogurt lemon blueberry bread was tops!

caprese salad with Kite Hill almond cheese that I was hoarding in
the freezer for such a time as this

Lamar, Kristina and I in the evenings

hashbrowns crisped in the waffle iron. NO OIL. IT WORKS!

a snack of raw veggies, grilled potato 'chips' and plant only ranch. So good!

mashed potatoes, corn and a huge serving of cauliflower and broccoli salad

a southwestern salad of rice/pico de gallo/greens/corn/black beans

'chicken' and rice, and raw veggies

my 'family nite' treat of tofutti ice cream, sliced strawberries, plant only
chocolate sauce and brownies

  1. I haven't visited here in a LONG time! I looked at these pictures and drool over tjose salads, and the nacho chips?! I haven't had a crunchy nacho chip in months. I found a recipe for making some.... haven't tried it yet. I am experimenting (today's project) with planting lettuce in a container I can move so that hopefully it can get some sun but not to much of the HOT sun. I would love to have unlimited access to fresh greens... but I want to thank God taht even tho our diets have needed to change somewhat, He has given us amazing health. Love you and miss you....
