Of Eating Potatoes and Other Things...

You know all the hype about low carb eating, etc etc etc that has been around for years? I think I'm finally gaining an understanding on it after several years of listening, observing, and experimenting myself.

Dr. John McDougall has been helping thousands of people for many years to find good health through whole food starches and vegetables. I am impressed, the more I am reading/listening to his teaching. It makes alot of sense.

I also am reading the book written by T. Colin Campbell, 
who also has my respect and appreciation:


We have been duped by Atkins and hundreds of others who mimic his thinking.
Eating more fat and less carbs DOES help ppl lose weight
but it does not prevent disease.

Personally, I would rather choose a lifestyle
and eating plan to includes both 
disease prevention AND weight loss.

about eating starch. I appreciated this very much.

I personally prefer to eat whole foods.
Mostly plant foods.
And the animal foods I do eat,
are free of added hormones and 
all the other junk that comes with 
meats, butter, cheese and milk these days!
BUT...
I am doing my best
(in this imperfect world!)
to focus on
STARCH...
(plants)

It works out in many ways...
black bean burgers,
plant strong garlic mashed potatoes,
sweet potatoes,
stir fried veggies with whole grain pasta,
vegan chili,
taco stacks with potatoes for oil free
replacement to chips,
bean soup,
porkless beans,
and on it goes...

Dr. McDougall tells us not to be shy
about spreading the truth, and
it blesses me greatly to do this,
having come from a family who specializes
in factory farming of animals for
as long as I can remember.

Altho the dating on the lecture is a bit off
from the Creation dates of Scriptural history,
I am blessed that Dr. McDougall took the time
to share with us the message that
it isn't about a diet that works for you
like Paleo, Trim Healthy Mama, Atkins,
etc,
but it is about a lifestyle change that
is a must if we are to reverse and prevent the
horrible diseases we now have an alarming
increase of in our country.

Our children deserve us departing from
practices that have increased in food industry
because of greed.
They deserve us getting educated and
reclaiming the ground we have lost
thru ignorance and addiction.

This is what I'm thinking of these days...

and do the research.
